Nicole Davies

Hello! My name is Nicole and I am a Marine spouse and mother of three daughters, ages 16, 10, and 7. I have been a stay-at-home mom most of their lives while also pursuing my Master’s degree in Marriage and Family Therapy. In the past I have worked as a social worker for child welfare in the state of Pennsylvania. I have also taught preschool for ages 2.5 - 4. During my master’s program I interned as a therapist at an inpatient psychiatric hospital working with adults, teens, and kids. My ultimate goal is to become an independently licensed therapist. Our family has lived in Onslow County for 10 of the last 15 years, which has given my children a stability that is rare among military families. While NC has been my home for several years now, I am still a Yankee at heart! I will always choose a Philly cheesesteak over a pulled-pork sandwich. In addition to taking care of my family and my educational pursuits, I enjoy traveling to destinations near and far; a novel in which I can get lost; and chatting with friends over a good cup of coffee.


Better Than Raindrops on Roses, Part Two

If you already read part one of this blog post, you know the little things that make me happy even when I am doing my least favorite chore…laundry.  Prepare to get happy with me as I continue sharing the things that make my life easier…and happier…while I cook.

In the kitchen, there are lots of other items that make me just a little happy every time I use them.  First, there’s the One-Touch Can Opener, known around here as the “can maggot,” because of it’s shape and the weird wiggly motion it makes when in use.  Just put the can maggot on top of the can, push the button, and it opens the can while you do other things.  It’s small enough to toss in a drawer but delivers the convenience of those big electric can openers.  Makes this lefty so excited!  And the nickname just makes it better.

My friend gave me a tomato knife that actually cuts tomatoes into thin slices.  That little knife is simply the best.  It’s also red, so it stands out among the other knives.  I breathe a sigh of relief when I have to slice tomatoes because that Victorinox knife (yes, the same folks that made the Swiss Army Knife!) makes it easy.

Also in the kitchen, making me happy, are the hundreds of bar mop towels; the plain white, cotton dish towels that I use to clean up all my many messes.  They are cheap enough to have lots of them so there’s always a bunch handy.  And you can use lots of bleach on them to keep them looking good.  I have enough to make a large load in the washer so I don’t have to run a load of kitchen towels often.

I also love Olivari brand olive oil because it has this nifty little pop-up pouring spout built right in.  You can keep it tightly capped, but then drizzle like a pro because of that cool spout.  Love it!  Lexie picked it up for me on a grocery trip and I am hooked.  (Getting a kitchen tip from my kid makes me pretty insanely happy!)  And then there’s the Misto spray bottle that lets me load up my own oil and use it as a non-stick spray.  I love the usefulness and the bright colors it comes in, too!

And as I go about all my business in the laundry closet and the kitchen, I get happy when the house smells great because of my tart burners.  I love to load up that little night light with a bowl on top and get the benefits of a great smelling candle without the danger of forgetful me burning the house down by forgetting to blow out a candle.  My favorite scents are the baking scents like Lemon Poppyseed and Blueberry Cobbler.  I have a friend who makes the best smelling wax tarts, so I support another mom trying to make ends meet while making my house smell great.  Even better.
